  • Processing:
    Farmers carefully handpick ripe coffee cherries and deliver them to the washing station. Upon arrival, workers meticulously sort the cherries by hand, removing any that are underripe, overripe, or damaged. The selected cherries are then spread out on raised drying beds, each assigned a unique code to ensure full traceability and facilitate process monitoring. To maintain even drying, workers regularly rake the cherries. The drying process typically takes around 16–21 days. Once the cherries reach their optimal moisture content, they are hulled, dry-milled, and packed for shipment.

    Idedo is a town in the Yirgacheffe district, located about 10 kilometers northeast of Yirgacheffe town. Yirgacheffe is one of the eight districts within the Gedeo Zone. Idedo and its surrounding highlands are renowned for producing high-quality Yirgacheffe coffee, thanks to their high elevation and relatively cool climate.

    Mount Idedo Station was established in 2023 and began processing coffee the same year. Currently, the station specializes in natural-processed coffee, but a washing station is still under construction. Once completed, it will also process washed coffee.
