  • Processing:
    This coffee is processed using the traditional washed method, where ripe coffee cherries are hand-picked and carefully selected using the flotation method.
    After the pulp is removed, the cherries are left to ferment for two days before being thoroughly washed to remove the mucilage layer.
    Drying takes place on African raised drying beds, which allow for even air circulation through a single layer of coffee. Depending on environmental conditions, this process can take up to two weeks.

    Region and Cultivation:
    The Kochere washing station is located near the Kenyan border in Yirgacheffe, where local farmers process coffee cherries grown at an altitude of 1,800–2,000 meters above sea level.
    This region is home to 2,550 farmers who cultivate the local Kurume, Dega, and Wolisho varieties. In addition to these heirloom varieties, they have also planted more resilient and improved cultivars, 74110 and 74112. Both of these were developed in the 1970s at the Jimma Agricultural Research Center (JARC) to enhance resistance to coffee berry disease.
    This region has produced some of Ethiopia’s most sought-after micro-lots, thanks to its high elevation, optimal microclimate, and the extensive knowledge of local farmers.
